Research published in The Annals of Otology, Rhinology & Laryngology found that water with a pH of 8.8 irreversibly denatured human pepsin in laboratory conditions. Pepsin is the enzyme responsible for the tissue damage associated with acid reflux. The study also found that pH 8.8 water had good acid-buffering capacity.
